Ingredients1.5 cups (225 gr) all Purpose flour
3.5 tbsp (50 gr) butter
0.6 cups (140 ml) whole milk, plus a bit more for brushing
.25 lb (125 gr) Aged Provolone Valpadana PDO Cheese
2 tsp (10 g) baking powder
1 tsp mustard
1/2 tsp salt
1/4 tsp white pepper
Recipe for 8 scones – Total Cook Time: approx. 25 minutes
DirectionsPreheat oven to 375ºF/190ºC. Place parchment paper on a large oven proof tray.
In a food processor mix together flour, salt, pepper, baking powder, mustard, and butter, until it reaches the consistency of fine breadcrumbs. Remove the dough from food processor, and in a bowl or directly onto a floured surface mix in cheese, then mix in milk until the dough has a soft consistency.
On a floured surface roll dough out to about, working it as little as possible to .75in/ 1.5cm in height. Use a glass or a circular cutter to cut out 2in/5cm round circles. Position the dough on to parchment paper.
Brush tops of raw scones with butter.
Bake for approx. 12 minutes until golden. Let cool a bit before eating.
